I can't add allow RAM to java

Hi.
When i try to allow more than 1GO RAM to java it don't work :
I just see : allocated memory 50% (495MB).
I have a fix computer and i add 3 GO of RAM (1GO when I buy it)
Sorry for my VERY bad english, but i'm french.

I don't have a 64 bits OS, but I reach very fast the 100% of memory use, then my FPS fall from 30/40 to 5/10 ^^'.
