First, let me say that I am getting GREAT Minecraft performance using this computer:
Gigabyte Z68X-UD3H motherboard running U1H bios
Intel i5-2500K CPU
8GB Corsair Vengeance RAM
GeForce GT 640 Video Card
Mac OS X 10.8.5
I regularly get over 200 FPS however I also regularly get a very disturbing crash. At random times, Minecraft will simply freeze... the screen will freeze, but if there is any audio playing in-game or otherwise, that audio will continue. If I'm in a voice chat with someone, that voice chat will continue, or if I'm near a mob in Minecraft, the mob sounds will continue, but all screen updates and user input will be completely frozen.
I have learned that logging into my Hackintosh remotely using ssh works, so I have set up a script on my phone to login to the computer and kill all processes named minecraft or java.
9 times out of ten, that will restore my computer to full function, but every now and then, especially if I wait too long to run the script, the computer will fully lock up.
I had similar problems on this same computer back when I was using a GeForce 430 and running Mac OS X 10.7.2, but they were VERY RARE. Currently, I get the freezes every time I play Minecraft and the freezes usually come between 5 minutes and 20 minutes into my play session.
I have tried multiple java command line options to raise the memory, but nothing is a real fix. The best I can do is that right after a fresh reboot, running Minecraft with -Xms2048M -Xmx2048M seems to give me the longest play session, but it still will randomly freeze.
I plan to do some more testing on this same computer running Linux Mint 14 to see if it might be operating system dependent, but I'm wondering if any of you have any insights. Here are my guesses:
Java incompatibility (see below)
Minecraft Bugs
Video Driver Bugs (I'm using the native video driver supplied by Apple with OS X 10.8.5)
Memory Bugs
Motherboard Bugs
Overheating (I'm not overclocking at all, though, and my rig always blows cool air out its vents)
Other Mac OS X Incompatibility

I'm planning to test gameplay under Linux Mint OS, and I'm also planning to test gameplay using Intel HD3000 instead of the nVidia card. Does anyone else have suggestions?

Retired StaffI'd start by removing java, and reinstalling. Java 7 might work better for you.
