I have a Late 2011 15in Macbook Pro, and the discrete graphics card works like a dream with most of the things I've played on it, consistently smooth, no issues whatsoever.
However, no matter how low my settings (I can run Minecraft on full settings, with it occasionally dropping to around 40-50fps), I am consistently stuck at 60fps. I am set to Max FPS in performance, not Balanced or Power Saver, and I have tried all mixes of the available settings, but nothing appears to work!
Specifications:
OS X 10.7.5
2.4Ghz i7 processor (quad core)
16GB RAM, (1333 Mhz Crucial)
AMD Radeon 6770M graphics
Usual Settings:
Max FPS
Normal distance (I don't like the visual effect of Far distance)
Fancy Graphics
OpenGL on
Is there anything I need to enable or disable in order to get above this FPS?

There is a fine line between ingenious and insanity. I'm afraid I veer more into the insane side.
I'm joking, well 60 fps is quite good, but you could try deleting servers/ single player worlds and make sure your not running other programs in the background (steam/ internet browsers etc..)
*facepalm* Mac jokes...
Hey ur stoopid PCs all sucks MAC FTW!!!1!!!1!!
I kid. I've seen some DROOLWORTHY PC builds. All of the ones that I would want are out of my price range! My Mac was a birthday/study results/"I owed you money from last month, just got my overtime pay, and your 6 old laptop is screwed" present from my mum all rolled into one, and I do know it isn't a gaming machine, but Minecraft and a few Steam games are all I really play on it. I have my XBox for the rest. And it's been flawless with my photo/video stuff and my studies.
Don't get me started on the Retina Model though...I got a WHOOOOOOOOLE rant on that!
Anyway BACK ON TOPIC:
It's not really that I NEED above 60 for average gameplay, it's just when I'm screen-recording (recording some videos one of my builds, trying to recreate it in another world save without editing either world), Quicktime dragged it down below 30fps. The rest of the time, it works perfectly.
I'll give those suggestions a shot and see what happens.
I don't know why, but for some reason (and this will sound absolutely ridiculous), playing in Full screen instead of an enlarged window fixes the problem.
While recording it now fluctuates in the 30-70 range, generally around the 60 mark. While not recording: 80+ frames, often higher.
Most of the time, because sometimes I need to pause and check my emails or whatever, I run it in the expanded window rather than setting it to full screen, and when I clicked in the settings to check everything, I accidentally clicked full screen. The instant it went on, my framerate went up. Maybe it's something to do with the GUI having to be loaded in the background, I don't know. But it worked.
I'm starting to feel like a right idiot for not putting it in full screen in the first place, but when you're recording, everyone recommends playing in windowed mode to reduce any frame rate issues. Ironically in this situation, it was a hinderance. o_O
Nevertheless, thanks for the suggestions, ladies and gentleman!

Okay that makes sense. A lot of people don't mention that they are playing in a resized window instead of full screen. Not sure if it will work for you, but if you want to play in windowed mode like that, you can try turning off the WDM by right clicking on the minecraft launcher, selecting properties and under compatibility put a checkmark in 'disable desktop composition' and see if that helps your FPS.
Same here thanks i was stuck on 60FPS which isn't normal i turned off Vsync and i went to 500FPS THX!!
Just so you know you may want to use the fps slider and cap it at 120 as you won't see a difference in more fps than that and also with too much more you will constantly see tearing where part of the screen is what you really see but the screen will start rendering the next frame, its weird.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
Stupid 3D..

Nope, checked that. Forgot to mention it in my post though.
Options
Video Settings
Vertical Sync
Off
Esc
As I said above, I had already tried that and forgotten to mention it in my settings. I was still capped at 60.

Also in 1.7 there is options > video settings and then on the right side second from top there is literally a max FPS slider
