As the title hints at I'm wondering what, if anything, I won't be able to acess in my current survival single player once the new content is officially released. Will the new mobs all spawn or will a witch only spawn with a hut? I'm guessing huts won't just appear when the new game content is launched.
Basically I'm just wondering what I'll be missing out on if I don't restart (if anything).
As I understand it, if you have a save game, nothing changes in it, no new content will show up until you explore far enough out that new chunks have to be generated. Only then would new content spawn. I THINK that's what the deal is, don't quote me.
Depends on the content. In the case of the witch it's spawning is likely tied to the structure. New mobs that are part of the random spawning like bats I believe should spawn anywhere. Any new structures or blocks that have been added to world generation would take loading new chunks in your old world to find them.

Pretty much this, they try to make everything work with old maps so that people don't have to remake their worlds after every update.
So basically all I'll have to do is make a home away from home if I want to see some of the new stuff. That's not so bad. I'm guessing I can just load up Minutor to check what I've explored thus far (aka what's been generated) and then go off exploring the edges to generate new chunks then? That's just a guess, not sure how the game decides what's been generated so I'm assuming (hopefully correctly) that only things I've actually seen have been generated rather than the huge mess amidst shows me.

That is correct. From what I understand Amidst basically exptrapolates the world generation features without them needing to be actually generated.
One good option to quickly get to new terrain is to make a new portal in the nether. Especially if you've explored a lot already.
What we've seen so far isn't worth worrying about. When 1.3 was coming, I was stressed about emeralds, but there's nothing in 1.4 - so far - that you will be missing. Except Baba Yaga's hut.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
