I think I know the cause.
If the world has the game rule "doFireTick" enabled, after 20 minutes of nonstop burning trees in a dense forest, the game will start to become unresponsive. I eventually had to use Task Manager on Windows 7 to force stop the Java process.

Steps I had done:
