You, sadly, cannot change your account name. You CAN play offline mode, but you will not be able to log into other servers. There has been talk of allowing you to change your name, but as of now, you cannot.

If you are talking about changing your nickname on your server, just do /nick. If you want to change your actual Minecraft username, that's not possible.
