I've been having this issue for a while now, but I've just put up with it.
My framerate hovers at around 70fps, which doesn't seem too bad, but for the system it's running on,
it's horrible. I can really notice the difference between 70fps and 120 so this is a major annoyance for me.
My build:
i5 2500K @ 4.2GHz
16GB 1600MHz DDR3 RAM
2 x 2GB 6950s in Crossfire
120GB OCZ Agility 3 SSD
My temps are all completely normal.
For comparison, my brother is running the game at around 80fps with this:
i5 2500 @ 3.3GHz
8GB 1600MHz DDR3 RAM
1GB Nvidia GT430
320GB drive he pulled out of a laptop.
Both of these tests are without Optifine, though I shouldn't need Optifine with a build like this.
All drivers are up to date, I did a complete fresh Windows 7 install yesterday. Crossfire is definitely enabled.
CPU usage doesn't go above around 40%.
you can't notice the difference if the computer or tv monitor plug-in doesn't have a refresh rate higher than 60. for you to notice a difference between 120fps and 70 you need to use a high resolution tv aka LED monitor with a 120hz refresh rate.
and the fps problem. well , minecraft already run smoothly with 30 fps asking for 120fps is for people using textures 256x256 or 512x512.
fixing the problem , does your gpu drivers are up to date? are you using updated LWJGL ?

wow your card support that because i search the specs. so i don't know why...
use optifine and set open gl to fast and chunck loading to smooth or multi core
but to tell you 1.3.2 have very lag issues so is not your computer
you can downgrade to 1.2.5 so you won't lag issues
I don't know if it makes much of a difference, but one of the two cards has the shaders unlocked, effectively making it a 6970. That should improve performance more, should it not? But yeah, it's looking like Optifine will have to do. Thanks for the help .
Edit: Installing Optifine initially made no improvement. I went into "Other" and clicked the button to reset defaults and then the magic happened! Now it's running at a much nicer 230fps still on max settings :D!
Unlocking shaders ,Since there has been reports of 6950 failures due to VRAM corruption, the 6950 Unlocked Shader Bios maybe a better solution. In no way using the Shader Bios is a guarantee that the card won't sustain damage, but I think it's less likely since the VRAM is still operating with spec i.e timings and voltage.
i don't recommend it because for 70$ less the cost of a 6970 would do the same as the OC 6950 and you won't take a risk of Vram corruption
and minecraft doesn't need that much to run smoothly as i said in the first comment.
with that kind of specs your computer have you can run minecraft smoothly at 120FPS with max fps on
and optifine installed with everything in fancy
the bug can be or is caused by the current version of minecraft.
but you're playing a 16x16 texture why you need so many FPS? put a 128x128 texture or better resolution so you can enjoy minecraft better.

Retired StaffMy Laptop with 3GB of RAM and 2.56GHz does 100~150 fps on average just because i allocated more RAM
Just tried allocating it 4GB. Now hitting 80fps, but that's still kinda low. Thanks for the help though.
I know it shows that I'm getting 180fps, but when I close the menu and return to game, it drops to 80ish.

with that kind of specs your computer have you can run minecraft smoothly at 120FPS with max fps on

the bug can be or is caused by the current version of minecraft.
