I plan on upgrading my Mac Mini from 2gb to 8gb. The reason is because I want to get a small boost in game performance, record gaming videos, and just do lot's of things at once. Will it help? Or not...

Both your memory and your gpu are on the lower end of the spectrum. I would recommend getting more memory and a dedicated graphics card.
