Well, I've been playing Minecraft for quite a while now and had been thinking, what if we remove/disable Hunger in some of the modes such as Hardcore and switch it with Stamina.
Instead of the normal food bar, we change it to a stamina bar which fills up as we eat and drink.
For example, consuming meat increase it by 7.5% while eating carrots gives like 2%. Drinking potions also affects stamina by 1%. Bottle of water give 0.5%.
- Instead of eating everything at once, we have to balance it. If it goes over 75%, you will get "Full" effect which decreases the amount of percentage you lose whilst running/working for 1 or 2 minutes and increases the natural regeneration effect to 1 heart instead of half.
- If it goes 100% you'll be affected by "Stuffed" and will get slow movement and mining fatigue.
- Lack of sleep increases energy consumption.
Energy anywhere above 65% starts the natural regeneration effect (half a heart per second [I think]).
It just gives that survivally aspect to me. It won't affect normal Minecrafters as you can still play the vanilla version that have the old hunger bars in and maybe they can implement a world compatibility which allows the hunger bar type saved game to transfer into a stamina bar type saved.

How About KEEP The Hunger Bar, AND The Stamina Bar Above The Health Bar Maybe?
