Hopefully, everyone here knows that mobs are categorized by types, based on when and why they want to kill you (or don't). If you're new to Minecraft, or forgot, I'll just repeat it. Passive=never attack, hostile=always attack, neutral=attack when provoked, boss=like a boss, utility=serves its creator(human or testificate), and those are the only ones so far (remember: the bat and all future "aesthetic" mobs are still passive, not their own thing). I thought of two more types of mob, and a few examples, but it's up to you guys to actually make up the mobs. The types are Defensive and Territorial.
Defensive mobs are like hostile mobs, but a little more complicated. Rather than wanting to kill you on sight, they want to defend themselves. When they see you (most mobs can see 16 blocks) they will try to hide or get away. When you get close to them (3-6 blocks away is the limit, depending on the mob) they'll attack a few times (also depends on the mob) and then go back to running away. The idea is, they're trying to scare you away so you don't kill them. An example of a defensive mob would be a bear, or any other real life wild animal.
Territorial mobs are a little different. They protect a predecided area, a certain radius around where they spawned. They'll attack you only if you are in their "territory" or are attacking them (so no going to the edge of their territory and grinding on them!). They will never leave their territory unless forcefully pushed out or if you attack them from over the border and they come to kill you, and if they are outside their territory, they will try to get back the first chance they get. An example of a territorial mob would be a big cat, or a magic "guardian" thing.
Ok, those are the mob types. Start thinking of mobs, guys!

Pigs that spawn in swamps are boars, defensive.
Some wolves, territorial. ((Random when spawned) Some will be neutral, some will be territorial)
All I came up with in 10 minutes, may edit and add more. Nice suggestion.
I meant new ones, but changing the existing ones is cool too. Maybe the territorial wolves could spawn in groups of 3-10 at cave entrances, so it's like their den, and the territory is around the den. Also, boars don't have to be only in swamps, they could be in forests and stuff too, maybe pigs will have a 40% chance to spawn as boars.

I really don't have many ideas, but I've always thought a flying mob would be cool and different. Maybe a defensive bird that attacks when you're near its nest (which could also serve as a spawner)?

I was going to make a snarky comment about utility and boss mobs, but then you mentioned them in the OP.
How about... GOLD GOLEMS! They spawn in pyramids and are highly territorial (haha i'm not feeling creative today)
Sudden idea: Spirits of some sort in strongholds or abandoned mineshafts. They manifest somewhat passively, but will deal low damage occasionally, or open and close doors / make weird noises and stuff to get you to leave. There would probably be some convoluted way of causing them to manifest and then killing them, too.
Hmmm... I like it. I have an idea for a new kind of mob: Assistant. A mob that goes out of it's way to help other mobs out. Like a witch that heals zombies and skeletons.

Sure, however I meant that in a pack of wolves that spawn, 50% of the wolves spawned would be territorial, and the other half neutral. (or something like that) Wherever the territorial wolf spawned, its territory would be maybe a 20-15 block radius. If you entered that area, ALL the wolves in that pack (territorial and neutral) would become hostile toward you.
Of course boars would not only spawn in swamps, (that's all I could come up with at the time) similar to how wolves spawn in different biomes, but only rarely. But yeah, the 40% of pigs seems good. Maybe a mud pit or sorts would spawn in a certain biome, and a pack of boars would become defensive of that territory if a player came within 20-15 blocks.

Hey, if you want to make sure I saw what you said, quote me on it.
I was thinking that there would be a Savanna biome that contains these mobs. There should also be a Passive mob in here that is related to one of my mobs. Here they are:
Lion
Lions are territorial mobs that spawn in the Savanna biome. They drop Lion Claws, which can be used in brewing a Potion of Satisfaction, which regenerates your hunger bar slowly. It can be corrupted to give you a Potion of Hunger.
Gazelle
Gazelles are passive mobs that spawn in the Savanna biome. They drop Raw Gazelle, which heals the same as Raw Porkchops/Beef, and can be cooked for it to heal the same as Cooked Pork/Steak! They can be bred with Wheat.
Cheetah
Cheetahs are territorial mobs that don't drop anything. However, they can be tamed with Raw Gazelle. After that, they will fight for you. You breed them with Raw Gazelle, and you can dye their collars like Wolves. They can also sit like Wolves.
Elephant
Elephants are defensive mobs that have a lot of health, do a lot of damage, are very large, and drop Leather when killed.
Crocodile
Crocodiles are defensive mobs that spawn in 2x2 "Water holes" in the savanna. They drop Crocodile Teeth, which, with 2 sticks in the same pattern as a Shovel, will make a Spear. The Spear is a weapon that does the same damage as a Stone Sword, and can be thrown to do the same damage as an Arrow.
There are alot of domestic animals in minecraft why not wild ones? Like snakes and falcons, other than wild cows, pigs, chicken and sheep?

Snakes are partially territorial and partially hostile. That means if you get near it say 3-4 blocks it will chase you and try to bite, which will poison you like a cave spider. If you shoot it with a bow you will still be chased. They are half block wide and about 5-7 blocks long. When the player is close it will rear up its head (1-2 blocks) and if the player went any nearer it will chase. Their behaviour is the same both night and day, but it is darkish in colour, so at night it will be camouflaged and you will be in more danger. Snakes only drop snakeskin when killed and they are rare (2.5%) They can be used to make enchanted leather armour and enchanted books when used in place of leather.
Falcons
Falcons are fast flying defensive mobs that spawn in trees that are more than 8 blocks high. They turn aggressive when the player tries to attack it or chop the tree down or gets within 2-3 blocks near the tree. They are very fast, and attack the player by diving from the air or ''arcing''. Falcons can be tamed, however, by using fish. But it is rather difficult, as they will most likely attack than eat the fish if you somehow get closed to them. Tamed falcons act like wolves, and can be commanded to stay still or follow the player by flying or hopping. Falcons drop feathers and rare drops include potion of swiftness.
Wizard 5% spawn chance in NPC villages and act like Iron Golems when you attack a villager but will throw splash potions at you. Wizard houses, if they spawn, will look some what like the look out tower. First floor is a normal floor. The second floor is an enchating room with bookshelves and an enchanting table. And finally the top floor is a potion room with cauldrons and brewing stands.
Monkey Will spawn in territorial groups in jungel biomes only. If a player gets too close then they will start screeching and if the players get closer they will they will all attack.
Neutral mobs already exist. They defend when provoked, so defensive mobs would fit beneath this.
As for protective. . . this may fit better as a unique feature for a mob, rather than a new mob type.
It isn't a bad suggestion. I'd love to see more varied AI in the mobs. Definitely wolves could be defensive, and blazes could be territorial around their spawner. It would be a good addition to see.
