When you attack one evoker, or someone near it OBVIOUSLY it will attack you and will summon their vexes. No problem here. Vexes can go through walls, lava, water, anything and STILL no problem here! Vexes travel an insane distance to go after you, still no problem here.
BUT, but but!!!... the problem is, if you run away from an evoker to make a "tactical retreat" (to heal up, or notice your armor broke), then it is almost very near impossible to go back to attack it, because it is spamming the vexes nonstop even if it is not in line of sight, even if there are multiple walls between you. (The only solution i found is if i die... which was an experience on a raid and not in the mansion, but i guess it can work on mansions too)
What happened to me: i went into the woodland mansion to clear it, i saw everyone on hard or hardcore difficulty they are just burning it down or blowing it up, never understood why... now i know it. Because it is a mess! I went in, made a pretty good progress clearing out the top floor, then half of the middle floor, and then i found a room with an evoker, quickly i killed it, it was dead. But there was 2 other, at least i guess there was 2 more, since i have seen more than 3 vexes, and i think an evoker can summon 3 vex at a time right? But none of them were line of sight at all! They were spamming vexes over my face and i had to ran out of the mansions since i had no idea where they were to rush for them! I went back to heal up and rethink my strategy, but i couldn't even go as near the mansion without getting swarmed up by vexes as i thought i can. I had to burn it all up, i had some iron and shoveled up some flint, then ran near to the mansion to ignite it all up, just doing this almost got me killed by the vexes. This "feature" / "bug" is single-handedly DESTROYED the overall experience of the mansion and completely ruins the option to explore it, you have only one option: burn it down.
This needs to be changed to let people explore the mansion without burning it down!

For now blitz the evokers with multiple pre-primed crossbows, preferably piercing or firework ones, depending on how clear your line of fire is.
Alternatively, we should have a weapon (preferably hoe or ranged weapon) enchantment that increased damage dealt towards "living ghost" enemies, that is Vexes and Ghasts, or simply stop them in spot.

I found the best way to deal with this is to if you are in a raid just go away for a while and they might despawn, that is what happened to me once, and if you are in a mansion just run around and kill all the evokers as fast as you can. Though to do that you should have really good armor, with good enchantments

We can build walls with lava filling to kill vexes going through or give ourselves a good field of fire and eliminate evokers from long distances.
