So villagers have been in the game for a long while and have had some subtle changed here and there, The green villager is pretty much useless.
I suggest that the green villager becomes a slightly rare villager to find, if you can catch him and get him to your home location, you can basically "employ" him. A trade of say 10 emeralds would give you a villager bed item, set this in a room and that would count as his (village) in his script, if there are crops to harvest in the set area then he will harvest them and re-plant them, then he would go to the nearest chest to deposit the items. if you hit Shift + right click it would open an inventory much like the horse and you could give him certain items to do various tasks, an axe to chop wood within a radius of his set room, a fishing pole to go fishing within the same radius (wouldn't be able to catch high grade items because that would be OP), low grade armor slot to keep him alive and a weapon slot for a bow to defend himself if needed. To keep things fair, you would only be able to have one of these guys active at one time. Once the bed is placed, your character cannot place another unless the helper is killed.
It would make some of the more annoying tasks in the game taken care of as you would have an AI helping out to some degree.
I must say this is better than most "helper AI" ideas that show up on here. You did a pretty good job of trying to make it balanced. I would change some stuff though.
First, I would change the cost to be daily, not a one time fee. Maybe 5 emeralds per day. Next I would say to drop the bow and armor bit, as Villagers are known to be passive. To me it makes more sense to make the player build an Iron Golem if they want the Villager to be safe. Plus the Golem is a 1 time investment (unless it dies of course, which is unlikely to happen for a while against Zombies).
I think that would make it a bit more fair, 10 emeralds to never have to get food or wood or whatever for yourself again is a bit too cheap
