What exactly would be the point of dishes? How would I craft them? How do I use them? Why do we need them?

As far as keeping ahead of the metaphorical Jones', serving cake on diamond blocks (or emerald ore for a more rustic interpretation of one-ups-manship) seems quite reasonable….
(The upcoming addition of the ability to place item frames on the tops [& bottoms] of blocks, will already allow some dish-like displays: anything further would need to be justified in terms of utility [considering 'looks cool' as a useful, but insufficient reason] and would require details of implementation – eg. crafting recipes, placement and usage notes – if it is to be considered.)

That's not because you add something real into Minecraft that it will be a good feature. For example, an interesting feature would be that the food placed on the plate can't be eaten unless you cut it (probably with your sword), wich take some time. Thus, while fighting, the plate would become a strategic plate.
Plates would also be very useful in creative to show off food.

It would be nice if the plate allowed us to eat a combination of foods all at once for a combined result rather than individually. This could be a simple sum of the individual parts (resulting in no difference between plate and individual food, except perhaps in terms of inventory management), or we could add bits of complexity to the system so that at least at specific points of the scale one side would be better than the other. Things like variety or the ratio of individual items in the group could trigger bonuses that, at least at specific points on the overall food-system scale, could make plates better than individual foods (like steak) or vice versa. The net effect would be a large expansion of aesthetic variety, allowing for lesser foods to actually compete with better foods.
Are you bored of eating food off of blocks. And redoing the same thing everyday. All we can do to fix that is by adding dishes.
