I thought it would be cool if the priest could raise its arms and send in a gold nugget particle effect to an entity, and heal it. (Note zombies or other evil mobs of course) but maybe iron golems, villagers, and even maybe the player.

When 2 priests fall in love with each other, they make a baby, there is 25%chance that baby will be a "Converter"
A Converter looks like a priest but has a white apron and golden eyes.
When it looks at a mob, there is a chance that the mob might convert into a good mob and start attacking enemy mobs.
Like, if it looks at a skeleton, the skeleton will start shooting arrows at other skeletons and zombies.
If it looks at a zombie, the zombie will turn against other zombies and stop attacking villagers.
This can be benificial if you want a base to have a stronger defense against zombie hordes because if u have gone mining, and u come back up to ur village and u see zombies spam everywhere u just lost the village. so the converter can be a good defense and a healer priest can help too defend base.
Maybe only those 2 special villagers can be spawned in these "Mega village" biomes.

There is a problem with this. A converter can be also obtained from the Zombie Villager and random villager breeding. Unless Mojang rewrote the code of Villager breeding, it will be unlikely you will get the breeding requirement you want.
Clerics healing? I can get behind that. Villagers die very easily, so it'd be good to have some natural way of restoring health. I'd rather some limitations be put on it, though.
Converters? Definitely not. If these were in the game, here's what I would do:
1. Shove two clerics in a pen, make them breed.
2. Take converter, place in convenient place.
3. Kill everything except converted zombies.
4. Name-tag (if they still despawn), armor up, and weaponize converted zombies.
5. Use for mob farms, devices, or just my own personal army.
I thought it was gonna have a chance to convert zombified villagers into normal ones. How many mobs can they convert at once? I don't know if I support just yet. So there should probably be some in-between answers instead of just "yes" and "no".

I don't personally see the Converter as being vanilla, but Healer Priests would be pretty cool. I like the idea of there being a villager who can heal the Iron Golems, other villagers, and maybe use their healing spells to hurt the undead. Not sure what to think about them curing zombie villagers. Maybe healer priests would be able to do some "converting" of their own instead and turn zombie villagers against other zombies for a little while, like a timed spell similar to how a potion effect wears out. Maybe just a few minutes. So you can't really make an army out of converted zombies.
As far as raising their arms to cast the healing spell goes, do you mean like the Evokers? For appearance maybe these good spell casting villagers could have emerald green or gold trimming on white priests robes, so it's gold or emerald green on white where as the evil Evokers wear gold on black. This would almost officially declare them as some white magic version of the Evokers.

With some tweaking I can see this being a fascinating inclusion.

And at center of village is a villager temple with a converter and a healer priest.

Ice and Fire: Dragons in a whole new light
Maybe a new type of iron golem could be added. One that throws iron blocks at far away zombies or troops. With massive range. I think that'd be cool.
