I was thinking Fraps, but maybe there's something better? Performance is not an issue, my computer runs at 3.4 GHz, i have 16 GB of RAM, and a 3 terabyte hard drive.

on Windows 7, you can actually use FRAPs ability to monitor Aero to record the desktop/other apps (though its not necessarily ideal).
As far as recording minecraft (or other games), FRAPs will work fine... it's worth noting that it's better to have multiple harddrives when recording ( 1 drive to run the game on, and a seperate drive to record the footage to ) - this is due to read/write issues that can (and often do) arise, leading to choppy recording performance on otherwise powerful systems.
Fraps only works on games or programs though.
