So im starting to feel like i act differently while recording that or i just record at the wrong times. Regardless i feel like i could improve my personality by talking more or making more jokes or play minecraft minigames that combine both of these. How should i improve?
I asked a very similar question on YTTalk (a YT forum) just a couple days ago. (If I should try to be less quiet and talk more in my vids)
The number one response I got, and the one that seems the best to me, is to just do your videos however you like, and you'll find your audience.
Bigger youtubers (Achievement Hunter, PewDiePie, etc) are generally "energetic" and "out-there", but you've also got guys like AllShamNoWow who don't say a whole lot, and are quieter, but they're still hilarious.
Basically, you're not going to find your "Youtube personality" very quickly (I haven't yet myself, really), but just keep doing your videos however you feel best doing them, and you'll be fine.
Remember, YT isn't all about getting loads of views and likes (although that's nice :D), but it's also just about having fun. Because if you don't enjoy your own videos, chances are, not many other people will either.
Game-wise, no offense, but Minecraft is very overdone. Your Galacticraft series isn't something a lot of people do, though, so it's different. But your best bet would probably be, eventually, expanding into other games you enjoy as well (GTA is a big one, and random indie games (itch.io) are also becoming more popular)

Take all the advice up above me there, then add some of this:
Preparation - Before recording, try doing something that might get you in a different mood. For example, if you have just come back from hanging out with your friends, try recording, as you talk to your close friends differently than anyone else. Never record after work. Never.
Collaboration - Try recording videos with other people that you think are funny, they can set you up for jokes, and if you have good chemistry the video will be all the more enjoyable.
