It's been a question I've been debating over a friend. What makes good let's play commentary?
I think good commentary should sound natural--especially among co-op commentary. I think that it's okay to go off-topic during a commentary and talk about casual things when not much is happening in the game. Take for example, mining or gathering resources. However, I think when intense things are happening, like a battle or something, it's really cool when the let's player gets immersed in the game--it makes things more exciting and suspenseful. If your conversations are natural and not forced, your audience will get to know you as a person and it'll build a connection.
While my friend--I can't say too much, because I might be incorrect, says that you should remained focused and concentrated during a video, and you shouldn't get yourself to worked up over something and become annoying. Don't tell off-topic stories that don't relate to the gameplay, and if you're working with friends you should remain attentive to the tasks ahead of you.
Both of us have legit points, but which is more enjoyable?

I believe a more natural and on the spot commentary. If something exciting is happening focus on that event. However if your doing something that might seem dull, like mining, you could definitely talk about something un-related to the game! It keeps people entertained because your taking them away from the seemingly dull task taking place. Just sayin!
