I'm working on making my world as immersive and semi-realistic as possible. For me, it's all about interaction and movement. I've animated a few things already. This is the next step. I built a custom river biome out of a dried river bed in order to provide elevation for a realistic downhill water flow. The water moves past this sawmill. So, I used structure blocks and redstone to animate a waterwheel to power a sawmill that I also animated and based on a real life Dutch wind powered sawmill. Now my citizens actually have a place to get wood to build the rest of their community!
Of course, I recommend checking out the videos to get the full experience, but I realize not everyone is into that and don't want to pressure the views. So, I'm including an Imgur album with a bit of an story in the picture descriptions and a GIF to see it in motion (sorry for the poor quality). I hope this provides a little inspiration. If you have ideas for improvement or other things to make the world more immersive, I'd love to hear them. Also, I have DOWNLOAD in the YouTube video description (Not as simple as a schematic if you want it to move in your world. The video might help understand better.
