Don't your server make backups every 15minutes in a different .rar/.zip? If not i can highly recommend you that addon for craftbukkit. I use it in my server. Griefing has no effect... I use 2 WD caviar black 2TB for the backups, that's enough for 20,000 different backups. Thats about 96times a day,150 days long. But anyways you can also let it backup 25 times a day or any amount you/your server has. If last scenario it will make 25 backups and it will delete the oldests and make a new backup...
The plugin is called: BACKUP, i take NO credit for it as it is not made by me. However you can find the plugin @ the Bukkit website.
Than may i give you some PROTIPS to make you server GRIEFING proof.
-When you configure backup make sure to let it backup your server at least every 15 minutes. This cause in 15 minutes there can be a huge difference in a map. Depending on the amount of players.
-Make sure the backups are not on the same disk as the server is on. For example, if you host your server from c:\minecraft_server. You should configure the backup addon to backup on for example d:\minecraft_server_data\backups.
-Make sure the backup disk has a separated powersupply/ACCU. This protect the disk from any damage due to power failure.
You might also wanna consider this for the server disk. As the server maps can become corrupt on power failure.
Maybe this advise is a bit late, but seen from your creation you really enjoy Minecraft. And perhaps someday you will make a big project again. That day, think about it. Last but not least, how do i know it works? I run my own server and got griefed over gigabytes of multiple maps. I don't say my advise is the best or good for anything, but it works for my server. I ain't scared of griefers/power failure.

I like this, and I'm sorry that someone blew it up. If you didn't have a whitelist, I suggest you add one in the future so only your friends can play and no one will grief your future creations.
