I know it seems so unbelievable (sarcasm), but some people have houses with only a bed, workbench, and furnace. I also loathe houses made completely made of plank...if you could see the **** I build, you would know what I mean. There is like 65 blocks, you don't have to use just plank.
But most blocks, unfortunately, aren't very practical for building.
Dirt: Abundant, but weak
Cobblestone: Ugly
Obsidian: Too difficult to mine
Brick: A chore to find
Ore Blocks: Too valuable to risk building with.
Ice: Melts
Snow: Melts
Wool: Takes too long to get dyes(and it looks too clothy)
And the list goes on. Wood is versatile that it is easily obtained in groups of four, can be obtained at the beginning of the game, and is renewable. The only downside is that it burns.

Caduceus, I added your table to the outdoor section. I also added a picture of the front of the BBQ grill for anyone interested. And Falcon, I realize all of that, but even just making a few windows makes it nice. Get creative. I play on a medieval server and I normally make my buildings with a bottom 1 layer of cobblestone, then plain log that goes from the floor to the ceiling on each corner, with wool as the main wall. I do agree, some materials are just plain hard to find. I only use 100% cobblestone when making a castle. We use bukkit and have the chair plugin, so we can sit on slabs and stairs. But yes, I would definitely love to be able to use chairs in vanilla minecraft.
It feels good knowing I made a diffrence in a few minecrafters building careers. Heheh, yeah whatever. You should see my castle. I inv. hacked, but it is huge, massive, ornate, and beautiful. Good on the inside and outside, with working sewer system. It's also by the ocean, so you can...swim...and such.

for the Kitchen, I suggest using logs instead of planks for the counter, as it gives off a more wooden feel than just planks. Since the top of the log texture fits the same size as the pressure plate, it looks much better.

Whenever I make my showers I almost always use a sticky piston flood gate in the ceiling, then I can have a button/lever that I can use to turn the shower on and off!
It's a fairly simple concept, but if you would like I can upload some pictures.

Here's a screen shot of the shower, I decided to make a little one minute video of it and I'll post that sometime tomorrow. I didn't realize you had more of an aesthetic shower in mind. Mine doesn't look TOO bad, but it could be a little better. I like that it's only 3x3 if you place it in the corner (I usually do) however, which makes it pretty practical. I have a button in the shower, which goes to the input of a T flip-flop, allowing the button to work similarly to a lever. If you don't have space for a large redstone gate, then you can wire a lever directly to the piston and leave it in the on position. If space is a very big issue a good looking solution is to place a lever near the top of the wall and keep it on, it looks like a shower head but serves no non-aesthetic purposes.
Not bad at all! The only bad thing is I am terrible with redstone. So if you could explain what a ...t-flop? gate is, that would be helpful. anyways, it doesn't look that bad, I agree. And after a long sweaty day of working in the mines by torchlight, you really need a shower.
