Water flows more quickly than lava. When the middle cobblestone layer is breached, it will not self-heal; instead, your lava source blocks will turn into obsidian.
I think only the lava needs to be all source blocks.

Nah, it flows down, but it doesn't make new source blocks. This is why my mob spawner/drowner/test tube facility needed a buttload of water source blocks in order to let the mobs be showcased at the surface.

Self- repairing wall (Doesn't keep out spiders, though. You can add that yourself.)
1.) Make a building.
2.) Make a cobblestone wall around the building, leaving one block of space between the inner and outer walls.
3.) Fill the space between the walls with lava SPRINGS (Yes, this is rather difficult to do on any scale. There must be a lava spring behind EVERY block on the outer wall.)
4.) Close off the top of the lava cavity.
5.) Let water flow over the outside.
6.) When a block on the outer wall is destroyed, lava flows into the space, collides with the water, and makes more cobblestone there! Self repairing! Finished product should look like this:

We already went into considerable detail on this design.

Cool. Neat trick with the stairs
Venit, quessit, induravit.
There are actually torches underneath each stair for added glowiness.

All of it. jk
The pictures from the town are old. The blacksmith got some smoothstone accents a while back.
Accents is the last part I do.

Okay, it wasn't funny.
LOL I built one on top of my house in a SMP server.
But it was 22 x 16, doubled everything.
Also, nice little castle you got there
