Why do endermen get there pantys in a knot when there looked at, they don't seem to care about villagers looking at them.
This is a very tough question, and I switch this around a lot, so don't expect this to be final. But currently I would say that they are very territorial. They're angry when you look at them because they perceive you as a threat. Everything else is weak compared to them, and is therefore not a threat. Pumpkins work because they aren't the brightest and when you put on a pumpkin they confuse you for a pumpkin. Sort of like animal camouflage.

where did the ender dragon come from? and why do you need to kill it?
Hmmm.. The Ender dragon is a rapidly evolved giant endermite, and probably the first one to exist in the End dimension. It is currently the only one that can produce large amounts of endermites. It makes them by absorbing the surrounding ender energy(through the ender crystals), which causes the fabric seperating the three dimensions become weak in the process, both allowing portals to be created and presumably causing the rise of many hostile mobs. If it isn't killed, the fabric between the dimensions may be consumed entirely, destroying them in the process, also allowing the dragon produce the next stream of endermites in the new world.
What exactly are the iron and snow golems? What connection do they have to pumpkins, villagers, and the Allincars?

Once a mysterious being feared by many Allincarians, it is a minor annoyance to our grand civilization. The Enderdragon was first discovered by the Great Third Emperor of Allincar, also known as Ohtirn. While exploring the vast landscapes of our planet he stumbled across a strange black creature from outside this realm, we now call these creatures Endermen. Ohtirn captured the beast after days of fighting and took it back to his laboratory, where he studied it's strange properties.
The discovery of cheap and affordable teleportation rushed in a new age for our civilization, allowing goods and services to be traded over vast distances. All seemed well until the attempted construction of a new teleportation device that allowed for the transportation of multiple people and items at once. Instead of being transported to the expected location, the scouting party was instead teleported to a new realm called the End. A week later another scouting party was sent in to recover the previous one, only to find their remains. The second party returned and informed Ohtirn of their fate.
Tensions between our civilization and the race of Endermen were already high, but this became the tipping point, culminating in the End War that rages on to this day. A month after the war it was discovered how to harvest Endermen in mass amounts, leading to their near extinction. The remaining Endermen traveled out into their world in search of an ancient creature, believed to have evolved from a species of reptilians that would have been the "End equivalent" of our dinosaurs.
Ancient Endermen folklore stated that they used to be guardians over all Endermen, but were ultimately sealed away because of their corrupting affect on reality. The goal in re-awakening them was to have them travel through the portals constructed by us so that they could completely annihilate our universe. Unfortunately for the stupid, barbaric Endermen, they had not considered the might of our glorious empire. We took the corrupting power of the Dragons and cracked the whole of their universe apart, slowing down their breeding process by several thousand years.
You may hear the traitorous heretics claim that the Enderdragons will continue to corrupt reality, even in to our own, but they are completely wrong. As long as we exist, we will always be able to keep their corruption at bay. Nothing shall penetrate our power. Long live the Great King Ohtir, for his influence shall spread throughout the entire world.

Iron and Snow Golems are two completely different beings, but they both operate on the same mechanics. Iron Golems, on one hand, are completely technological beings, and are the greatest invention that modern Testificates have ever, or possibly will ever, create. Snow Golems are completely "magic", meaning they just operate under properties we don't understand yet. Now, have you ever thought about who is carving the faces into pumpkins? The answer is nobody. Pumpkins were genetically created by a race that came before the Allincar in order for the common public be able to create life, as it was previously limited to only the higher ups. The magic inside the pumpkins is what brings them to life.
(Completely ridiculous, yes, but so is creating life with a formation or iron/snow blocks and putting a pumpkin on it)

Redstone is basically just an extremely improved version of copper. Whenever you walk over it it absorbs the energy from your step and uses it 100% efficiently. Whenever you make a redstone torch it converts the matter around it into energy, but it has a limit to how much it can hold at once, like a battery. As you can guess, this is why it appears to work "forever". All it needs is one atom of air, convert that atom back into the energy that made it and viola, energy that will last you for a very, very long time.
