You see Enderman are rare on earth and popular in the sky because that's where they're born - life given by the ender dragon and born to service the beacons that keep her alive. The beacons are tall so Ender Dragon gives her young the ability to teleport up the towers but nothing more. Until one Enderman overshot a teleport and ended up falling past the edge of the floating island in the sky, to Earth it falls. The sky is too far to simply teleport back, and Earth is too hostile an environment since endermen are sensitive to rain, creepers explode, and skeletons have bows.
So what's a lone enderman to do on the surface of the earth? Pick up loose sand, dirt, anything it can and try to build a tower back home.
Meanwhile Ender Dragon knows one of her babies are gone from the nest that is the sky and sends down two more endermen to investigate, as these two endermen arrive at the orignal fallen enderman he has built a tower fifty blocks high and is gathering more. But a strange new species has shown it's face - Man.
Enderman is confused, the other two observe. Man first eye contact with his new adversary, then proceeds to drive his blade through the lone enderman's body. Word travels back to the sky where endermen are dispatched by the Ender dragon to avenge their brother's death - This time they won't take eye contact lightly, and the tower commemorating their lost brother will be finished.
This is why endermen come in pairs, move blocks, and become nasty when you make eye contact.
