Minecraftians have wondered why Endermen attack when you stare at them for ages. The reason for this is, if you are not wearing their club uniform, they attack, thinking you are going to hurt them, while they are actually very shy.
Their club uniform, obviously, is a pumpkin. If you stare at an Enderman with a pumpkin on your head, you are accepted as an honorary member of the Enderman race. Of course, they will still be aggressive if you attack them.
The reason for the Ender dragon being hostile to you even if you are wearing a pumpkin is that he is the alpha Enderman, in his most highly evolved state, and you being there is an intrusion on his territory. Essentially, he is the king of the Endermen. He views you as another alpha, and attacks on site.
As all things begin, they must also come to an end. The end is where the Endermen live because they actually collect souls for the Ender dragon, which he uses to power his obsidian towers. Each ender pearl is actually a soul in it’s physical manifestation. The reason for the eyes of ender leading back to the stronghold portal room is because the crafting recipe has caused the soul inside to stir, and wishes to seek revenge on the ender dragon, therefore attempting to lead you to the portal. Of course, because they are in a highly unstable state, sadly, they will occasionally implode upon themselves, ending their existence.

Ender pearls are supposed to be the heart of an enderman. When you throw them they teleport you.
IMO Endermen are beings that bring blocks as a sacrifice to the enderdragon, and use them to build ender crystals.
Looking at them, intimidates them, they find that your looking at them because you know what they're up to. They attack in response.
Putting blaze powder on a pearl and making and eye, awakens the soul and it seeks to return to the End.
I would think the enderdragon attacks you because he is old and wise and knows your true nature. The nature of a human, humans destroy the world for their selfish needs, crumble down the fair in the name of progress, they must not be allowed to live. You get the idea that would also explain why the undead try to kill you, it's because you ruin their rest.
Or maybe Enderman attack you when you look at them because they know how you want to defeat the Enderdragon and they think that defeating you will keep the Enderdragon safe until it is good enough to come out of the end and attack the overworld
