Maybe there is a config setting to add the new trees.
For example, it might be set to allow tree-feller usage for Log:1+Leaves:1 - log:3+Leaves:3 and all you'd need to do is include the new ones.

Also, a Map for the server would be cool. Just not one that shows player locations and homes, I just think it'd be cool to have a map of the terrain.
For the sake of keeping the PvP aspect true to the style of most servers, you could take the seed of the map and pre-render it out and use a map of that. Full 10K x 10K world map with untouched terrain so that players can see where certain biomes are and such without being able to use it to scan for bases and player-built structures for the purpose of raiding.
And I'm not up to date on what NoCheat does and doesn't do these days, but last I remember it did NOT stop more sophisticated X-Ray plugins. The only way to truly block X-rays is with an ore replacing plugin like Orebfuscator.
Since the minecraft server is set to send the chunk data to players, with enough skill and knowledge, you can write a mod to detect the ore blocks in them. There was a lot of them not too long ago, not sure about no after I stopped using mods. Orebfuscator sends edited chunk data that does not contain ores. It converts all the ores in the map encased in stone.. into stone, then when a person legitimately reveals the ore, it turns the stone blocks back into the ore. It blocks x-raying pretty well. Less than a hundredth of the ores an x-rayer would see without it would appear to them with that installed.
