I watched some tutorials on witch farms and huge ceilings are always used to keep the spawn pads dark. However it seems like putting walls around the spawn pads would be a lot easier.

Yes, it affects spawning quite a lot.
In the case of a witch farm, you have very few spawning spaces available - ie, from the hut, usually 2 platforms of 7x9
That's very few, so you need to make the very most of them - any 'efficient' design removes all other spawninng.
Because of the limited spaces, any solid blocks around will reduce the chances considerably.
In a more 'regular' mob-farm (darkroom), it doesn't matter so much because your spawning area can be relatively huge. Even a quite simple one could have 3 levels of 20x20, so that's 1200 spaces; a few walls don't matter so much.
