Tweak it to allow more flat land sure, but don't change it back. The terrain generation is actually interesting now for the first time in over a decade, no more artificial height variation.
All they did was de-couple terrain generation from biomes to allow for more variation and less mountains that look like they came from a cookie cutter. Biomes don't need another biome just to have hilly terrain anymore. Now it works more similar to Beta, but with a more complex system for height and biome placement.
Of course, it's alll still WIP. It could be tweaked to allow for flat land more often, but right now it's a pretty decent balance. All the biomes outside of mountain biomes being flat really killed the exploration for the game, this change is still long over due.
I certainly agree that the terrain is getting more interesting. And i think i have to revise my OP a little. I generated a couple more maps and it seems it was just coincidence that i spawned inside some very big mountainous areas the first couple of attempst. What i have figured out, is that there is some sort of large scale highland/lowland distribution going on. There are very large areas that are rather smooth without many tall features and then there are very amplified areas. In those highland areas all biomes are quite tall, disected by deep river gorges. Its just like they went a bit overboard with the size of these things. On one map i flew over lowlands for like 20 minutes before i reached a highland area. So if you are unlucky you might have to walk for an hour to see any mountains.
What stands is the fact that the highland areas are very "blobby" whit huge (horizontal) masses of earth and rock. Would be great if there was a bit more variation there.
i am searching for iron to get some armor. not much to be found so far but looking for the level to find some. i went down to level -10 and found a cave but haven't been able to explore it because of getting killed by the skeletons and little zombies. and coal is scarce. you need lots of wood to make charcoal.

Coal is so hard to obtain, I spent an hour playing the snapshot and my cave exploration was only limited by my lack of coal to make torches. I still found 30 diamonds though so no complaints. Iron is also rather hard if you don't have any caves on the right level for it.
I found them starting at around 10, but after that they were all below zero. I found a massive cheese cave system that I almost go lost in.
are you finding diamonds in the caves? i have found none yet. i found a spaghetti cave at -19 and dug around there but no dimonds. i did find green lace hanging down but ran out of torches so i am going back to find out what is going on there. i did find 12 iron so i can use an iron pick now.

Yeah, the cheese caves are very easy to find resources in because there are so many blocks exposed. They also intersect with more caves because of that. I bet the green lace is from a lush cave above it.
the green lace was in a lush cave. almost got lost exploring it but it was adjacent to an amethyst cave. got attacked by two zombies. then going back found three diamonds in part of the cave. that was at level -27. got to stock up on food and torches and go back down..
i think a new chunk develops when you settle there. i moved from spawning point to a new home. there a zombie dropped a carrot and now i have food for pigs. from there i went east and when daylight was almost gone, i dug in and made a bed and slept. then the next day i wanted to explore. within a hundred clicks i found a shipwreck. now how can that be. i think that shipwreck developed because i slept there. very strange to me.
yay, i finally got my original login from a few years ago. i should put my temp login to rest. now am back on xbox beta. still haven't found the mountains. should i do caves and cliffs?
(Just read my second post)

what is the level you found the diamonds on.
