I recently discovered that my local video store has a pretty decent collection of anime TV shows. For some reason they've put them in an unmarked shelf below the Adult films.
So based on a few of your avatars I assumed that we have some anime experts here. I loved Hellsing but apart from that I haven't seen any other shows.
I'm not interested in anything overly cutesy or shows that focus on school girls running around giggling.
Give me some action, adventure, humour, horror etc.

We'll start with the one you mentioned, if you haven't seen Hellsing Ultimate watch it, it isn't completed yet but its a hundred times better then the original.
Elfen Lied is a gory one but worth the watch, it also has "adult content" in it so avoid it if your underage.
High school of the Dead is an epic zombie based anime. It has a heck of alot of fan service in it also.
HunterxHunter is a very great one as well. Its not so gory, nor adult themed its just plain good because its good.
These 4 I think top my charts, if you haven't seen any try giving them a watch.
These tend to be some of the more standard suggestions. I also usually recommend Elfen Lied, Neon Genesis Evangelion, Mononoke(Possibly the best anime show ever IMO), Honey and Clover, and Higashi no Eden.
edit: Honey and Clover is a little cutesy, but it's an overally interesting shows that deals with issues as diverse as suicide, the meaning of life, and social withdrawal. Just don't go into it expecting any action.
Blundgeoning (i dont know how to spell it) angel,its pretty much about an angel that lives with a guy,and if he like sees her naked or stuff like that she takes out a spiky black bat and she blows his head off,its funny.
Also dont worry about the blood it just comes out like a giant water hose so you dont have to worry about anything like that if youre not into gore and that ****,like me im not into that,oh almost forgot,you can see the videos on youtube. ;D

Bokusatsu Tenshi Dokuro Chan, or Beat-to-death Angel Dokuro-chan. It's good for a few laughs, it's pretty cheap humor though. Its primary merit is only being 4 episodes long(or was it 8 including the second season? I don't remember)

Those are both my favorite animes, Hajime no Ippo is about an ackward teen that starts boxing, and learns that he's a heavy hitter. He continues on the line until, at the end of season 2, he becomes the lightweight champion of Japan. Probably my favorite series of all time, cause theres lots of humor, good art, and decent fight scenes.
Rurouni Kenshin is about a rurouni (Or wandering swordsman) living in the meji era. This rurouni by the name of Kenshin is actually an amazing swordsman, know as the strongest alive. He ends up staying at a dojo for a while and a lot of his old enemies come to fight him. I've never watched the whole anime, but from what I have the manga is wayyy better. It's still a pretty good anime though.
Well, Some ones that I like that have lots of action and fighting are:
Dragon ball/Z/GT (<- lots of filler, watch Dragon Ball Kai when you get to dragon ball z if you want less filler)
Inuyasha (Some romance, but it's actually quite humorous)
One Piece (Pirates with lots of weird powers!)
Full Metal Alchemist (Alchemists that are trying to resurrect their mother)
Death Note (A genius that is trying to kill people who have done wrong with a note book, another genius is trying to find out who the killer is. <- Badly explained)
Soul Eater (Hard to explain but, there are people that turn into weapons and there are people that use them)
Naruto (Basically about nations of ninjas, in Naruto Shippuden they try and defeat "The Akatsuki" mainly. Lots of filler)

Mystery: Death Note (I'm not sure what genre to put it into. But, I'll be honest, it gets very boring after 20 or so episodes.)
Action/Mystery: Durarara!! (Great story line. Great characters. Great anime)
Drama/Comedy: Clannad (Very emotional and deep, but has some comedy in it)
Action/Adventure: Fullmetal Alchemist (Brotherhood is better, though)
Comedy: School Rumble (I highly recommend this one. It is hilarious.)
I'm not sure what else to put. I probably have more, because I feel like I'm missing some.

I'm extremely surprised death note hasn't come up yet; it's most likely out of all these that a library would have it.
i recommend angel beats, spice and wolf and of course full metal alchemist.
Have you read a single post here? Plenty of people have mentioned Death Note.
