What are the pros and cons of evolution? Why wouldn't you want it?
As you probably know, hitting B during an evolution stops the process.
I have always wondered why you would do this, and will it try to evolve again at the next level? I have personally never interrupted one, for fear of this situation.
Also, if you catch a Pokemon above the level it evolves, will it evolve the next time it levels up, or is it stuck. If it does, is it theoretically possible to have a double evolution?
Non-evolved pokemon are weaker, but they learn skills faster(An Alakazam might learn a certain high-power skill at lvl 65, while an Abra might learn the same skill at lvl 50).
I think you have to hit 'b' on every level gained if your pokemon wants to evolve, but I might be wrong.
You're leveling them to 100 anyway, take the stat growth boost. Tens of levels of higher growth stats are going to be much better than having learned a good move a few levels early.

Charmander learns Flamethrower at level 37. If you were to allow him to evolve, he wouldn't learn it (as Charizard) until 47. If you prevent a Charmander from evolving until level 37, it will learn Flamethrower; then as it levels you can allow it to evolve. So you end up with a level 39 Charizard that knows Flamethrower, even though it (Charizard) wouldn't learn it until 47. This also has the side effect that you could use a TM, replace the flamethrower move, and then when Charizard reaches level 47 it will try to learn the move again. Although I don't think that has many applications. This applies to most other pokemon too; you can, through clever manipulation, have evolved pokemon that know moves they (as evolved pokemon) wouldn't otherwise know.
Another difference is that unevolved pokemon almost always have a higher speed stat, and occasionally they have a higher special attack stat as well.

Pikachu requires a thunderstone to evolve. No auto-evolve there.
