Looks good, but just a few minor things since you haven't got it yet:
There are times where mismatched RAM can cause stability issues, I'd assume this would be especially when overclocking. Might be worth going for 16GB, it's not a massive price change anyways.
The price of the GTX580 does look rather nice, especially considering the compatibility issues with 7xxx and 6xx cards. Price/performance may actually be similar to the GTX560 Ti 448, since that hasn't fallen in price. Both would be fine though.

Graphics-wise, I'd guess it comes down to 560ti 448 vs 7850, which are exactly the same price, so here's the two options:
Edit: Reading some reviews on the 7850, I'll most likely change it to a different manufacturer's version. — Changed link, I found a card that was $10 cheaper and has very good reviews.

Of course, I forgot that you would be doing a Hackintosh. Hopefully they add support for them or you are very limited.
Yeah, but the rumor is that the new iMacs will have the 7970M in them, which *should be* based on the 7850 or 7870, which *should* bring support for the 7850/7870. And if they refresh the Mac Pros instead of killing them off, they'd also have new cards, so there would be some other new options.

4/10 I think I'm being slightly generous here, but it doesn't have a dedicated GPU, the HDD doesn't have much space, the processor is old (but reliable), and it's on WIndows XP.
This is my build:
CPU: Intel Core i5 2500K Overclocked to 4.00GHz (will overclock higher soon)
CPU Cooler: Corsair H60
Motherboard: ASRock Z68 Extreme4 Gen3
RAM: 16GB DDR3 1333MHz (it was on sale and I do Server Hosting)
SSD: 128GB OCZ Agility (I just wanted an SSD to put Windows 7 on, nothing more, plus I had to keep within the budget, so a better SSD wasn't an option.)
HDD: 2TB Seagate Barracuda 7200RPM (I need lots of space)
GPU: ASUS GTX 560Ti 448 CUDA Core Superclocked
PSU: 750W 80 Plus Silver PC Power and Cooling (Yes, this is a name brand PSU, it's made by Seasonic)
Case: NCIX Phantom
7.5/10. Closed Loop and OCZ SSD. Far as I know the Crucial M4 would still fit and be much better. Overkill PSU, 650W is the "sweat-spot"

9.5 out of 10, solid build, good job. Just wondering, but what's wrong with a H60? The installation took about 10 minutes.
Closed loops aren't as good as lower priced air-coolers, something like the D14.

For now, the only recent cards with support are 5xx and 6850/6870, but Apple should end up supporting the 7850/7870.
