I'm probably going to SLI the 560ti, and I also don't need to buy a HDD as I am going to just reuse my old one. I'm not sure what optical drive to buy or if it matters really, so I'd like recommendations on one.

Your better off with an AMD Processor unless you want to bust your wallet. Back in a august I built a new PC with the same case, GPU and Ram. So It looks pretty much good.

Ya go with AMD if you don't need solid performance for gaming/multi-tasking/hosting a small server/etc etc.
No but actually good choices. I personally prefer gigabyte motherboards, have been buying them for years and have yet to be let down. ASrock I have heard some bad things about.
Also, you will want more RAM than that. It is dirt cheap now-a-days. Go with 2 kits of what you picked, or a single 2x4GB kit. I rec. a single 2x4GB kit. Optical drive.... Can't help you on as I have not used one nor purchased one in 2 or 3 years haha. If you are not going to SLI, then 750 watt is a little overkill. Not hurting anything having the extra power available though.
Also, you are going with the K processor, so I assume you intend to overclock? What cooling solution you going to be using? I have found the H50 to be absolutely perfect for such a set-up. Pair it with some nice quiet fans and you are set.
