Delete the files in the .minecraft folder, which can be found by typing %appdata% into the start menu, clicking on Roaming.

It depends on what you want.
If your looking for a simple clean up if you accidentally did something wrong, open up your minecraft and click on 'options' above your login button. There you will see a button with 'Force Update' Click that then press done and login. This will re-download your minecraft.jar ( the thing that runs minecraft)
If you have installed mods and want to reset/it isn't working properly do this.
--First of all I am assuming you are using Windows.--
--Windows 7 and Vista (what you probably have)
Open up your start menu.
In the search bar type
%appdata%
with the % still there and press enter, or return (depending on keyboard)
You should see a folder named Roaming, enter it.
Now you should see .minecraft, again open it. scroll past the XP to find what to do next.
--Windows XP--
Go into your start menu and look at 'All Programs'
You should see something like system tools, or accessorys, once in it click on 'run'.
Now type %appdata% in it
you should see roaming folder, enter it,
Now you should see .minecraft if you have installed it.
--Reseting Minecraft--
Delete the folders listed below.
Bin
mods
config
resources
now you need to run minecraft and go into options and press Force update.
--Complete Reset--
Delete your .minecraft folder, unless you want your saves delete everything around it but the 'saves' folder. Note that deleting 'lastlogin' will remove your last login when you launch minecraft also note that deleting 'servers.dat' will delete your pre-saved servers.

I don't own a mac, but the minecraft directory should look the same. Just google up where the mac version of minecraft is stored.
EDIT: No wonder I don't remember posting this.. this is for the old launcher & this is now partially outdated.
You should start up like how you did when you first got the game.
This is what I did because I have so much forge files i my game versions that it drove my OCD crazy so I just decided to rage quit and deleted all the files on my minecraft to start a new but it turns out doing that solved me problem xD Hope this helped you.

Everything in the .minecraft folder is part of the game. If you delete the .minecraft folder, you will effectively reset the game. You can delete everything except the saves folder if you wish to keep your saves.

Go to Edit Profile
Click on Open Game Dir
Back Up Your Mods and World Saves
Delete everything on the folder
The start your Minecraft again
