I realize Karob isn't offering support right now because of health issues, but I would like an answer if anyone has one. I'm using the mod on the 1.7.10 version of the game and none of the sapling recipes work. I have several other mods running, but that shouldn't affect recipes, should it? How do I plant big trees without saplings?
Are you actually using Karob's version, or thevidaj's fork that was put up on CurseForge? I haven't used the mod myself, but a bit of searching through the last few pages of the forum thread and the CurseForge page reveals that the fork by thevidaj has saplings disabled "for the time being" (though it hasn't updated since Jan 2016). You might look in NEI (or the creative inventory search if you don't have NEI installed) to see if the saplings are even defined in your build of the mod. If they are defined, you might be able to make some MineTweaker scripts to allow crafting them. If not, I imagine you're better off looking for an alternative mod.
Karob's, I think. It's from Karob's top post on the thread, anyway. It's the version that works with 1.7.10. I installed NEI and the saplings do show up, so I have no idea why the recipes aren't working.
There are many mods with big trees. Here are a few that I am somewhat familiar with:
1. Forestry (though in the 1.7.10 version you have to spend some time using bees to breed different trees together to get the big trees like Coast Sequoia, or find a villager selling Giant Sequoia saplings, since that type isn't available through breeding, and the big trees tend to take longer to grow if you don't breed them for better stats; on the other hand, it also offers a multiblock to automate growing and harvesting the trees)
2. Biomes O' Plenty (most of the trees added by the mod generate in certain biomes, and have specific leaves that drop the matching saplings, it's not a matter of crafting them)
3. Natura (I'm less familiar with this one, but the redwood trees in this mod grow quite large, and even have separate bark blocks iirc)
4. Yggdrasill mod (I haven't used this one myself, but I think I came across it before when looking for mods with large trees, unfortunately it looks like it's only for MC 1.6.4 and before; plus it's on a Japanese forum, and I'm having trouble finding a download link - for all I know, it could be a WIP mod that was never completed )
Okay, but what if I *just* want big trees and not bees, extra biomes, or whathaveyou? I'm trying to keep possible conflicts to a minimum.
And I'm still having problems with the original mod. While I did find saplings in Too Many Items, they aren't quite like what's depicted in Karob's guide. There's no hat or dead tree sapling, the big oak sapling looks different and is called 'Black Oak Sapling,' instead of cyprus there's 'Swamp Sapling' (which doesn't look like the guide sapling), and there's a 'Pine Sapling' which looks an awful lot like the 'Spruce Sapling.' None of these seem to grow into anything despite putting them down in the patterns indicated in the guide and using a whole stack of bonemeal on them.

Sorry, I don't know of any mods like that. Closest I can find is Dynamic Trees, which might or might not interest you.
Thanks. It's interesting, certainly. More complex than I'd hoped, but maybe I'll try it.
