Wouldn't it be nice to be able to reclaim leather from leather items, especially since we can smelt down tools and armor? For example, you could take your excess leather armor pieces to the crafting table (or anvil) and by placing that piece beside a set of shears you can cut it down to obtain/reclaim once piece of leather.
This would be great, especially for those who have zombie grinders and acquire quite a few of these items.
given that leather can already be sourced from cows, mooshrooms, horses, donkeys, mules, llamas, rabbits (by crafting skins), and fishing…
I don't see much added utility.
If the point is to give some utility to found leather armor (rather than to introduce an alternative leather source), I'd rather see these used as an alternative dog food. (Even if the result is purely cosmetic — like parrots dancing to jukeboxes.)

In regards to all the other leather sources, there are some biomes where they are difficult to come by. This technique would provide slightly easier way to accumulate leather than curing zombie villagers to get a leather worker.
