Lots of the fireplace designs I've looked at are simply solid blocks for chimneys. I've had some fun and challenges building functional chimneys.
The first pic is the chimney top. You can get as elaborate as you want, with rain covers, , beveled edges, ad infinitum. But this only takes a 3x3 footprint.
The second is a side view of 2 fireplaces , 1 on the floor above You can see how the chimneys are completely separate until joined at a proper place, 2 fireplaces exiting one exterior chimney. Obviously, the chimney voids are separated by a solid block until joined. You can shift a chimney left or right before joining to avoid corridors or whatever. It is not particularly easy, but that's good for me, I'm still learning Minecraft Think.
