I actually did play bedrock on a second-hand account months and months ago but have given it back and forgot a lot.
My thoughts are:
-Hunger goes down roughly the same, so that's cool
-Axes are severely nerfed. No more weapon straight out of a bonus chest.
-BTW, bonus chests offer a lot more now. Starting maps are kind of odd though.
-A lot more customization options for the world by default, but a bit less control.
-THE GAME DOESN'T PAUSE WHEN YOU PRESS ESCAPE
-Mob spawning is out of control. Maybe it's just my biome but I had dozens of strays on me.
-Mobs drop rare things a lot more often
-Snow falls instead of breaking, and clumps around buildings I make even without snowfall.
-Caves might be a bit different? Can't tell yet
It seems overall compared to Java that it's higher risk higher reward. Combat is so much tougher but you get cheap armour and weapons easily. I can recall from the old account that getting multiple tridents was possible (although that's also because drowned are more balanced on bedrock, swimming sideways if unarmed and meleeing if armed when close by).
