Well. .This is where Corona has gotten us. The whole family playing Minecraft on PS4 4-player splitscreen My wife rarely play games, but when she does, she is a completionist. That didn't go well in Pokemon Go, so good luck in this game
Well.. We have established some very neat homes. I have a giant underwater base (with a keycard-reader, yay), and helped my son make a hidden cave with hidden piston-powered doors. My wife made a nice little cottage with very nice asthetics and a little house next door for our 5 year old daughter. Everything is connected with underground railways.
And with all that established, some questions starts to lurk:
Will we need to go further and further away to find exiting stuff? We found a couple of villages, some ruined Nether Portals and a single treasure map... But will that kind of stuff regenerate, and will new exiting stuff spawn around us? Or will we need to go further and further away to find new content? We are already travelling several thousand clicks out when going on adventures. Its starting to be near impossible.. Especially with kids.
It would really be sad, if we spend so much time establishing our homes, and is just ending up with contentless wasteland around us.

PS) Oh and btw.. In both instances we found a village nearly all villagers suddenly dissapeared. Anyone have a clue about why?
I'd bet you haven't been to The End and fight the Dragon. You need to find a Stronghold, they are underground, but can be located with enderpearls. In the strong hold you can find a portal to The End. Read more about it on the above link.

Answering one of your early questions: no, new structures will not continue to spawn near you, but there may be many, many structures close by that you have overlooked.
The world you are exploring and settling is one of trillions of possible Minecraft worlds. The geography and structures that appear in each world is determined by the world "seed". You may have let Minecraft select a random seed to generate your world, in which case it would be a long string of numeric digits.
If you and your family get tired of exploring the Overworld (grass fields, oceans, mountains and forests), then the next adventure is usually the Nether.
The Nether is an entirely new place that is somewhat based on the concept of Hell. For new players (and some veterans) the Nether is a difficult place to get to, and an even more difficult place to survive. However, the Nether presents all new adventures. Things to explore and conquer.
If your family tires of the Nether, then there is one final place that Journeymanmc mentioned. You can travel to the End.
I'm new myself. I'm on bedrock pc. The way I go about the game (since I prefer not to see spoilers) There's a "how to play" tab that helps reveal some less intuitive mechanics, also there are achievements. Whether to complete those is up to you but it does display a nice list of things to do that helps nudge you to progress or try new things you may not think of. Things like defeating dragon is on there, or using campfires to collect honey from beehives, etc. It's worth checking out if you haven't so already.
