Despite my disagreements with some features that came in updates over the years, overall I think the game needed much of the content that was added recently because let's face it, the official, non modded game has remained stale and far too simplified and I'm not just talking about survival mode (The Undead Castle idea was a good one), or difficulty options, but things like terracotta give people more options for aesthetics, so did stained glass and now thanks to bells, we can design clock towers or altars better. (yay worship Herobrine!, just kidding!)
the aquatic update got us better water effects and now water doesn't look like it is continuously running off the sides of the glass while underwater like it did in older Minecraft, now water behaves as it should, and can even pass through wooden fences, Mojang did good on this one.
and it is thanks to villager trades that we are able to gain massive amounts of emeralds which too can be used for aesthetics on certain builds, not just for trading, although I wished getting quartz was a trade option from villagers.
in 1.16 apparently walls no longer have holes in them which is great.
But the game can still benefit from wooden walls and of different types, in my opinion, for builders who want to use this.
Nether update got us more types of wood, now we can make Crimson doors which is nice.
Shulker boxes allow carrying around mass quantities of items and I'm excited that me and my friend will get a chance to find them soon on our current survival world, in addition they effectively expand the capacity of the Ender chest which is useful.
Barrels don't need space above them to be opened like chests do, meaning they are the 2nd best option for storing your items IMO.
But the game can benefit from so much more, it's a sandbox, it makes no sense to artificially restrict people's creativity for the sake of nostalgia, nothing is stopping you from playing older Java versions, people who want more content as standard are simply saying modern non modded Minecraft would be better with more content than it has currently. More animals, like someone else's frog suggestion, more food items like corn, for cornfields and people who want a more farmland theme to their builds, as well as potential for food recipes and a cave update giving us more ores like someone else suggested adding in calcite and sulfur with their own unique textures would serve a purpose for builds too, especially if the calcite was available in both block and half slab variety.
Isn't Minecraft supposed to be about this immersive imaginary world you create and decide what goes? not much point in calling it a sandbox if it is heavily restricted in what you can and can't do, but that's just my thoughts on the matter.
you should look into the addons documentation. i havnt had a chance to get back to it, still exploring the new content. but it was pretty wide ranging two years ago. at that time you could create new blocks with custom functionality, create new entities like boats and mobs and make new items and equipment a well.

I think the games potential could be increased by removing the 256 Y build height restriction, cubic chunks is a very popular mod and also there is support for it to become part of the standard game, this update would be welcome by fans. At the very least they could move bedrock and void down to -2048 to -2053 Y in the overworld (would be useful for a cave update btw), make oceans and ravines deeper, and raise mountain generation on default world settings in the extreme hills biomes to about 286 Y with the clouds moved to about 256 Y, and the new maximum build height being 1024 Y, 512 Y would be okay but not great. Imagine building a sky temple but you don't want it being too close to the ground? also some people aren't liking the fact that their city skyscrapers are taller than the surrounding mountains, which is an eyesore for any serious builder.
ive always wondered about the build height rational. used to think 256 was extreme, but i recently built a 13 squared platform for making ice at around 240. i was really surprised how big and obvious it still apeared from ground level.
the logic cant be terrain chunk gen because yhats still arbitrarily capped at around 150. maybe its just an attempt to limit max chunk save size. but that excuse sounds sketchy too.

May seem extreme, until you do fan tribute things like Kami's Lookout, then you need room for Korin's tower, lol
Dragonball fans did these things in Minecraft, yup.
seriously, thats what i was expecting my 13x13 to look like, but even at 240 it stuck out like a sore thumb.
Yup, and if you built Kami's Lookout it would be even more obvious from the ground, it would cast a vast shadow over whatever biome it was floating above, triggering mob spawns en masse unless on peaceful. Trust me I know, I have a (incomplete) version of Kami's Lookout on my Creative world, the one the castle is in.
it's not shown in the screenshots but it is in the same world
it would be highly problematic to attempt rebuilding it in survival mode, unless over an ocean biome, but even then I'd need vast quantities of diorite and quartz, and quartz isn't yet a trade option, and mining the stuff in the nether would be time consuming.
