Spruce trees are the absolute worst, I'll tell ya. They sometimes have that little opening at the top of their leaves, so some of the logs fall onto that and you either have to wait for the leaves to decay or build up a tiny staircase up there to get it, and now you have this disgusting mess you have to clean up. Then, it's kinda hard to tell which trees need you to build up a block in order to get the last bit of the trunk, so it's just the slightest bit of extra annoyance.
Oak trees are fine for the most part, but every once in a while your tiny sapling turns into this massive HONKER of a tree with a million weird branches. You either have to waste your axe durability breaking through all the leaves (because, let's be honest, it's too time consuming to switch between your axe and your hand to break each time) and then, once you get down with your massive bounty, you realize you missed a log and there's this giant wart of leaves left in the air. On the opposite side of the spectrum, you also get these really tiny trees that you can't even walk under, so you have to break through a few leaves to get to the very meager crop of the tree.
Dark Oak is a better Spruce, since the logs are satisfyingly dark and you can get so much more of it from one tree. But, if you're not building from it, then you have all this wood you don't need. The planks are weirdly saturated, so I don't like using those, but at least you don't need to use your building wood for crafting. The doors are pretty snazzy too, even if they don't match the plank color. I'd say they're like second best.
Jungle trees are in a bit of a similar boat, but I just don't like jungles. They're so annoying to traverse, and you gotta deal with all those vines... Also, neither the planks nor the logs look good. You can't really farm Jungle or Dark Oak trees well, since they don't have many leaves and you need 4x the saplings to make one.
Acacia logs look nice (or, at least the bark does), and they're easy to get, but the planks are just so weird looking...
But BIRCH? Every single tree is perfectly simple, and the perfect height, at least outside of the tall birch forests (which at least look cool, in a weird way). Every tree's leaves are at least 2 blocks off the ground, so you don't have to break through anything, and the logs don't extend outside of your reach, so you don't have to build up to get everything. The planks? They're a very satisfying, cream-ish color, and all the other birch stuff match its tone perfectly. Even better? They match pretty well with sand stuff, so you can incorporate multiple types of material in one building. Since the birch logs are white, the planks go very well with other white blocks (even though most blocks go with white blocks), making for the perfect floor to a birch house. The logs aren't the best looking, but they do help break up the textures if you use the bark side. All birch stuff contrasts well with pretty much all natural blocks as well (except for sand as mentioned) so it wouldn't be as garish, I guess.

Yeah Birch wood is nice and clean looking. Definitely my favorite. I used stripped birch wood for a basketball court that came out pretty awesome.
