I'm busy messing around with slime chunks so i can get around to building a farm.
I used chunkbase.com so I can find a slime chunk. I went to that chunk and built two platforms the size of the chunk at y=39 and 35 walked more than 24 blocks away so slimes can spawn and afk'ed for a bit, when i came back no Slimes. I had even lit up some caves around the chunk to make it slightly more effective.
There are still issues with mob spawning and based on different bug reports/rumours/etc there is also an issue with many mobs not spawning underground where they cannot see a skyblock (i.e. Slimes will spawn in a swamp due to it being open to the air but not in a closed cave underground in a Slime Chunk with many layers of stone/dirt above it). As far as I am aware the Slime chunks are also a little strange in Bedrock, the chunks are the same regardless of the seed.
I have also tried to create several slime farms underground with no luck but found they were a real pain as soon as I started building a Guardian farm (64x64 area in the middle of the sea entirely open to the air) (I won't get onto the fact that Guardian farms don't work - that's just another headache).
Mobs spawning is a real PITA in Bedrock right now and the hope is it will improve over the next few versions but many are not holding their collective breaths.
