The idea of arrow-activated button (can be used as ranged training) is inspired by MrMoopig:
Button on the wall:
(place around 5 air blocks between the farmland block and the glass blocks)
When you shoot the pig from the front, the pig bounce back, hit the stopping (glass) wall and fall to the "pressure plate", causing a block update. Even if you kill the pig, the corpse still fall down and revert the farmland back to dirt. (see the gif below)
Limitations:
You can only shoot the pig in front (approximate angle) of the model. Shooting sideways will not work.
Pressure plate on the celling:
The two glass blocks are for measuring the spacing between the two parts of the system. Note that the pressure plate will NOT work if the spacing is less than that.
The ceiling pressure plate is activated by destroying the minecart (containing a chicken) using a bow. The chicken then fall slowly and hit the farmland and convert it into dirt, destroying the dry sugarcane next to it, which causes the sand to fall and transmit a redstone alternatives signal.
Limitations:
The pressure plate will need around 2 seconds to respond. Also, you cannot shoot the arrow directly upwards, as some blocks in the redstone alternatives will block your arrow.
Pressure plate on the floor:
All the dry sugarcane are linked together so all of them will break if one of the sugarcane gets updated (its a bit tricky to set up all these dry sugarcane). The sugarcane is also holding a water source blocks. Remember to put solid blocks on top of each sugarcane otherwise the pressure plate will NOT work - the sugarcane will despawn randomly.
When the pig is shot by an arrow, it will always jump to the opposite direction of where you are. The surrounding glass wall prevents any extra horizontal movement of the pig. The pig therefore falls to one of the eight surrounding farmlands and breaks all the sugarcane, releasing the source water. A redstone alternatives signal is transmitted when the water flushes away the torch nearby holding a gravel block with some signs attached to it.
Limitations:
You cannot walk pass this pressure plate.
Falling target:
This model can be used in ranged training. When you fall down onto the pressure plate, there is around 5 seconds for you to prepare your bow to shoot the falling target. Failure will cause the animal to fall directly onto another farmland and release a redstone alternatives signal.
If you want a easier training session, use chicken instead. Pigs/sheep/cows are really challening.

Moving (oscillating) target:
An oscillating minecart with a pig inside is for you to train your bow skills on moving targets. The half slabs will prevent you from shooting the pig before shooting the minecart (Update: the half slab is not needed since the minecart is 1m x 1m x 1m, but you still need to keep the glass layer on top of the slabs).
The farmland with crops on them are placed around 5 blocks below the rail system. A dry sugarcane is placed directly adjacent to each of the farmland, so when any one of the farmland is converted to dirt, all the sugarcane will break, which causes the sign to break when the sand falls. Remember to put a solid block on each of the sugarcane to prevent any unwanted block update caused by the growth of sugarcane.
This is great! Thanks so much for the comment about this, otherwise, I would've missed out. I was actually testing an extremely similar idea about a week ago, but a problem arose when I couldn't get stationary water without some sort of hex editor. I was trying to make a Chicken Basketball Mini-Game out of it, and I just couldn't get the stationary water to work. How did you get your water to be stationary until the pig hit it? And thanks for starting this topic by the way, it's awesome!
I never use any stationary water/lava at all in my redstone alternatives creations. This is how I do that BUD switch without using stationary water:
1. Make something like this
2. Use a water bucket in this spot. Water then flows to that hole.
3. Place a stone (any solid block) to that hole and fill it. The water source block you just placed is not updated because there is no block update directly adjacent to it.
4. When you update the block next to the water source (eg. converting the farmland to dirt), the water source block realized that there is no hole near it, and it will flow to the other side, transmitting a redstone alternatives signal.
Note: when the pig (any player/animal, and even its corpse) fall to the farmland, it will become dirt, causing a block update.

I pretty like your last concept in your video, its cool! I think you can also do a mob detector [a minecart containing air/animal hits a cactus wall (minecart disappear) and falls into a pit containing a farmland
