Ice bug
If a block of ice is broken, even with a block below, it will not become water. However if the ice is melted by a nearby light source, it will become water as it should.
Trapdoor Closing Bug
An open trap door will automatically close if a block update occurs in an adjacent block.
Door Closing Bug
An open door will also automatically close if a block is broken adjacent to it. This no longer applies to a closed door causing it to open.
Mobs in Glass
Occasionally a mob next to glass will actually enter the glass as a map is reloaded. That mob can exit the glass and can detect the player.
Locked Entities
Occasionally but rarely the entities of a map will fail to save. This is usually caused by third party apps but has been known to appear spontaneously.
Teleport to Surface
If the player is in a two-block high gap and is at least partially in another block, they will teleport to the surface when the map is reloaded. This is most commonly caused by falling sand/gravel and closing trapdoors/doors/fence gates.
Void items preservation
If a player dies by falling through the void their items will not be lost.
Door Item Drops
If a door is broken by the top half no item will drop, however if the bottom half is broken two will drop resulting in either lost doors or infinite doors respectively.
Block Edges Torch Bug
If a torch is placed on the ground next another opaque block, including the invisible bedrock at the world edges, it will automatically place itself on the adjacent wall.
Wrong Data Values in Hand
Many blocks, such as dyes, have different textures depending on their data values. On occasion the wrong texture of one of these blocks is displayed in your hand as you hold it. However the block still functions normally.
Arrows Through Glass
Arrows if shot as soon as the bow starts charging can go through a glass pane immediately in front of the player.
Continued Motion
If a player is flying upward or climbing a waterfall as they pause or check their inventory, they often keep going and in the case of waterfalls, will even climb faster.
Armor Bug
If the player dies they keep their armor and if they were to take fall damage both the armor and the player take the damage instead of just the armor.
Sign Typing Bug
On android typing "!," "6," "1," or "^" will result in the previous character being deleted. This is unconfirmed on iOS.
Missing Item Drop of Falling Entities
When sand or gravel falls on a torch, cobweb, or half slab, it will not drop as an item when it should.
Partial Map Loading in Multiplayer
When playing in multiplayer local or global, players who join the server will sometimes not have the map completely loaded and will often have large parts of the map look exactly like the seed was before editing.
I've had a few bugs.
1. Bow when fully charged shows no arrows.
2. Dyes still have wrong textures when shown in hand! (This has been present since 3.2!)And also, mobs become "passive" while they are in water, they will not pursuit you. If you get close enough they will attack though.

Crops bug-
When a crop (Wheat or melon) reaches its 3rd or bigger state, or you bonemeal the crop, and exit and re enter your world, the crop is at its baby state again.
How to eliminate this bug-
Update your chunk by placing a block.
Armour bugs- 1. When you die, you keep your armour. 2. When you die and you are in your armour inventory, the armour section changes to a light red colour. 3. When wearing armour, in the armour inventory and in lava, the armour section becomes blood red colour (Or possibly the light red colour as stated above. 4. Armour takes fall and drown damage, but doesn't protect us from the damage.
The crops thing is probably due to the fact that the game needs time to save and you quit before giving it time to do so.
Some of the armor stuff is not really glitches but a combination of intended factors.
There are also a few bugs with the signs:
1. Sometimes if I place a sign, leave the map, enter the map again, the sing is invisible and I only can see the font floating in the air.
2. You can't write "ä, ö, ü" on a sign (maybe this is because of the english language?).
3. If you try to write a "!" it changes the line of the sing or it deletes the last character (the same thing with the characters "1", "6" and "^")

The first one is the locked entities bug stated in the OP, those characters are not in the code so not really a bug. And I have been completely unable to repeat the last bug that you stated and would need proof of its existence

P.S. I am trying to type this using half the screen on my nexus 7. It was dropped and half the screen shattered.

But what I meant is this
If a sand or a gravel block falls on a torch, they don't drop themselves.
