I try to find it under my download folder and I don't get anything.

it has added iron doors, just follow the instructions in downloaded zip.
EDIT: tuesday and no update. for my mods school is getting in way, i know that its hard to make mod and live with school.
Yes, it is hard with school lol, it gets in the way sometimes. On wednesday, I have a day off from school, so I can get a lot of development done that day. But so far, very good progress so far! I'm not going to rush this update out or there would be to many bugs. Thank you guys for your patience!

I don't mean to rush you, I know the feeling. I have a Youtube channel and I hardly find time to make and upload videos on a regular basis. Glad to hear that things are going well, good luck with the further development of the plugin! I can't wait!

How do I open iron doors? I spawn them in my inventory, replace my wood doors with them, but the pressure plates and the switches don't activate them

Are you sure your using the right items? Pretty sure inside this plugin fence = a lever try it again?
If not reinstall the plugin, or update/redownload PocketMine.
If it still doesnt work, congrats! You found a bug

What you should do is turn these into custom blocks. They can be crafted via a chest, like in the diorite etc. Mod by darkserve or whatever his name is. You can ask him. They wont require a texture pack because it is already issue the terrain file.
