I tap on a mob and it just disappears and when I tap again it appears

It doesn't disappear it goes behind you. Enable third person view in MCPE options and you will see it.

I do see it now but I want it to kinda be like a wolf so when you stop walking you see it standing there also make it so it jumps because it keeps suficating

Download the current version, you might have the previous one that had bugs. See the video how it works.

too_many_items currently does not have items with an added damage value. I will be implementing them soon. Stay tuned.
