I am just requesting a mod that adds saddles to the game so that you can ride any animal from a cow, to a sheep, to the pig which you actually can ride on PC Minecraft. I hope some big modder or at least somebody has an answer, thank you.

Saddles haven't been implemented within the binary structure of Minecraft:PE. This will make it hard to put in, BUT it is possible.

Unless we get some sort of Mod API, it is impossible to do it.
Mods for MCPE are just unlocks that have been implemented into the code.
