Underwater Base - Make a little base/hideout under the ocean. You could even have a tunnel form the land to it or something!
Castle - Build a castle. You could make it as BIGas you want or as small as you want!
Survival:
Capture The Flag (2 or more people) - Split the world in half and lay down cobble. Get a blue and red piece of wool and 1 person on each side hides it somewhere (It has to be visible to the other side). Then you go and search for it. First team to grab the flag (the wool) and get it to their side wins!!!

Seems a bit of a hassle for CTF, however for Creative I have built an ocean building before. It was tiresome and meticulous, but still fun to make it.
As for creative ideas, I tend to draw off of TV shows, images, or other builds that people have done in Minecraft. Castles are pretty generic builds, unless you're planning to go on a tangent with the idea and have a sci-fi type castle.
But here's a WAY better idea to make MCPE fun:
For Creative:
-Look at other people's builds/TV shows/images to draw inspiration from them and build your own creation with that media as the basis.
For Survival:
-Download a bunch of Survival maps form the MCPE: Maps section.
Once, I built this epic building in the middle of a deep lake. It was half underwater, half not. i then built a bridge from my door to land. The top part was made out of stone bricks and the underwater part out of glass.

Theres more if you are on Survival though first 3 will work for Creative as well
1. Build a small cafeteria
2. Make some cool water rides!
3. A private beach looks pretty cool. Equip it with chairs and umbrellas.
4. Make a animal farm which stretches across your house and make an override..
5. Make an Archery range to practice your hand at bows. A zombie trap would work if you want to practice sword.
For zombie trap -
Make a 10x10 or 15x15 or bigger room with roof closed.
Wait for a day and delete 2 blocks. Have fun killing them!

On my survival world, I made a giant mix of a + and X encased in a square with 4x4 (above bedrock) tunnels (and I remove stone at/below bedrock to make it a little parkour), that spans throughout the entire 256x256 world. With a bunch of sub-mines.
At each opening to the edge or center I make the corners rounded.
At each corner of the world and center of the edges (128 at edge) I made a 4x4 vertical tunnel with ladders and a mini waterfall, though I have to make the ones that are underwater's entrances 1x4 with a ladder air bubble, and keep up the sand with signs.
At the very center of my world, which is under water, I made a big-ish air bubble with a 3x3 vertical tunnel with ladders, which of course, leads to the center of my mine. I made a water leak in the air bubble for a waterfall in that tunnel.
Right now, I am mining for gold and iron. Gold for powered rails to make train-stations to/from the center and edges/corners. Iron because... I'm running out, lol.
I might post pictures later, that is, if anyone's interested.
What I do is find a seed with a large island and live there, collecting resources and surviving during the day, then going on a rampage to kill every mob I see at night. Its quite fun, and involves strategy and different tactics as you hunt down each mob.
I know now that creepers take 4 hits to kill with a stone sword, skeletons take 2 and spiders as well. Zombies are fine if you rush them, but spiders can be tricky. Luring a skeleton under a tree to kill is the best way without taking damage, but if theres more than one mob coming after you use him to your advantage. Creepers you take one hit once, then back of, another one, then back off, then finish them off with two more before they explode.
Doing challenges such as this that limits your minecraft playing style will help you become a better player and makes playing more fun then just girding mob drops or such, and sleeping at night.
