That's a lovely start to your island project. I quite enjoy the natural design of your paths and the way you blend similarly colored materials together for the walls of the buildings. I haven't tried out most of the new copper blocks (those added in 1.21 and 1.21.9), but they seem to fit in nicely with your color scheme.
To develop the "theme" you seem to have going, perhaps consider a slightly taller structure for contrast, such as a windmill or clock tower. Having one of those is enough. A larger wheat farm (or more varieties of crops in general) would pair up well alongside them. You may also consider renovating the body of water surrounding the moat by sprinkling in more vegetation — it's mostly down now to adding "life" to the island, whether in the form of plants, mobs or both.
If you would like to keep the island natural-looking, you'd probably want to keep the slight elevation changes rather than completely terraform it. Keep plenty of the greenery, and I would recommend making the oak trees slightly larger (which can be done by growing a sapling on a grass block in the air and then connecting it to the ground with logs) unless you are fine with how they already look.
This may sound like a cliché, but if you are feeling burnt out, try something else for a while before returning to building. Whether it's Overworld exploration / mapping, combat or resource accumulation, I find that alternating between the activities you engage in can help boost your overall motivation.
A large wheat farm with a windmill came to mind for me too. It adds contrast to the skyline (for lack of better words) to your location, it fits in, it's practical, and it will make use of a fair amount of space so that you're not left having to make things just to fill empty space.
Likewise, to add some life, consider some animals to have around. If this won't be in the form of farms, you still have other options. I like keeping birds in large oak trees on the branches, and although they can be a bit of a pain to get up there, they add auditory life to an area that is worth it. A simple one is to keep dogs or cats around, and the nearby village can source you with the latter.
Speaking of which, don't be afraid to leave empty space. I wonder if sometimes people feel like they have to use space for something, but leaving it as empty grasslands has a purpose. it breaks up your location from feeling too cluttered and dense (but maybe you'll want that to be the case in some locations) and adds natural space. Your large oak there is a perfect example. I'll fill in some of the cave opening, grow large oaks here and there, grow grass where needed, and sometimes add flowers (usually spots of a single type as opposed to the random way the game does it). So don't be afraid of leaving some space without a building on it.
I feel like your paths are close to perfect. They add variety without overdoing it and looking like "block vomit". Anything taken to an extreme can look worse, and I feel like you stopped before reaching that point with the paths. My only small suggestion here is to consider a "triangle intersection" between the house and the building to the left in the first picture. Alternatively, make it a circle of sorts and add the tree to the middle. This breaks up the core of the intersection from feeling too large and empty. The reason for this is because of something called desire paths and that spot feels like it should be connected, but... I don't always follow this myself so it's a choice if you want to. But it would be a way to use some extra space that has a natural purpose and (in my mind) looks nicer. I would also add lighting along the paths, and you have multiple options in how you do this. I would use lanterns on lamp posts, or on small, broken up sections of fences, cobblestone walls, or stone (serving as large rocks of sorts).
I don't have any suggestions for build(ing)s otherwise because that entirely depends on what you want to add function-wise. Your builds themselves are above my skills so I wouldn't be able to give any suggestions there.
I would definitely add a bridge connecting to the village and then develop that too, essentially building a village where you have your own island plot of land within it of sorts.

Beautiful base! Don't worry about the empty spaces. I will refrain from making specific recommendations, as my skills are much worse than yours. But usually, if I don't like the layout of a location but don't have any specific plans, I go somewhere else and do something else. Perhaps later there will be an idea for a new building, or decorations, placing animals, or planting exotic plants.

That's good advice. I burned out in my first world because I got bogged down in a big project that I never finished. Now I have several locations that I develop in parallel, without staying too long in any one of them. And then there's mining, exploration, and adventures...
