So I have had 3 Minecraft hardcore attempts ended by the Enderdragon and I was hoping someone on here could give me some tips and tricks for fighting the Enderdragon in hardcore mode.
Hardcore mode is equivalent to hard difficulty with the only exception being unable to respawn on death and change the difficulty itself, so there's nothing exclusive to hardcore mode in defeating it. If you can defeat it at all, you can defeat it in hardcore mode.
I'm not sure I have any particular tips other than to be prepared, and maybe overly prepared. I've created three hardcore worlds. One was shelved, one ended in death, and the other is ongoing. In my first one (the one I died in), I defeated it with no real issues, but I was definitely prepared. I had either diamond or netherite gear and it was entirely enchanted already. But otherwise I didn't do anything special. I defeated it the routine way by getting rid of the healing crystals atop all towers and then using a bow on it while flying, or a sword while it was perched, to defeat it.
If you've had three attempts all fail at the same spot, I'd say look at how you're approaching it. How prepared are you? What are you going with? What is your approach it? Being way overly prepared, even if it's possible to do it with much less, isn't a wrong approach if it's what you need to do, after all.

How exactly were you killed? Were you knocked into the air by the dragon and took fatal fall damage, or did you die to the strength of the dragon's hits?
For the former scenario, I would recommend next time that you either drink an 8 minute slow falling potion and forget about fall damage altogether or throw an ender pearl at the ground every time you get knocked into the air. For extra caution, if you are climbing the obsidian towers to remove the caged end crystals, you should use scaffolding and dump some water below the tower. That way, if you get knocked off the tower, you will land in the water and take no fall damage. I've found these tips to be life-saving on my first ender dragon fight.
For the second scenario, the ender dragon's hits aren't that strong if you wear enchanted diamond armor, which you should acquire as soon as possible in hardcore mode. If you're still struggling, perhaps consuming a golden apple or using splash potions of instant healing might help.
Another possible, but less common scenario, is that you die to dragon's breath, the pink particles that appear on the ground after the dragon shoots a fireball at you. The best option is to just run away.
Have endermen chasing after you? Dump a water bucket under you and take them on from the safety of the water. If the dragon happens to launch a fireball at you during this, just collect your water, quickly run to a different location and redump it.
