Guys, I need help. So, I want my diamond pickaxe to have Fortune III. I actually refuse to go mining without it; I am officially a Fortune addict. Why go down mining and get the normal amount from mining ores when you can get double, triple, or even quadruple that amount? This is especially the case with diamonds, the rarest (non-emerald) ore and most valuable.
After some painstaking time, I successfully kidnapped a villager and made them a librarian. I started trading with them, hoping I could eventually get them to produce Fortune III, but after more educating myself, it turns out my villager is useless now. To get other enchantments, they had to have been never traded with before and you had to continuously break and replace their work block until they offered the enchantment you want. My villager offers Loyalty II, which is not something I need at all. The most my villager offers are subpar trades to get emeralds. Apparently, once you trade with a villager, their trades are locked. I still think that there has to be a way to get other items from them somehow, unless this trading system is really stingy and pretty easy to screw up.
I could go back and kidnap another villager, but for one, I really do not want to do that again, because it really is a pain. Also, I tested this on a Creative world, and no matter how many times I continually broke and replaced the lectern, they just never showed the enchantments I wanted, so I'm worried that once I go through the blood, sweat, and tears of setting up a new area for my villager and kidnapping another one, that getting them to offer the enchantment I want will be a pain to get in itself. If I do this, I also have the option to breed the villagers, but I don't want to make an awkward villager breeding center in the middle of my hill. It'll look weird and stick out and might be a pain to set up as well and have successfully running.
Another option I have is to continuously enchant diamond pickaxes with Level 3 enchantments in my enchantment table until I get Fortune III on my pickaxe, but honestly, it really is a waste of experience and lapis. Fortunately, when I was doing this, I got two pickaxes with Efficiency IV, Unbreaking III, and Silk Touch, which is really cool, but I can't continue, since I'm under Level 30. I need an XP farm or something so I can continue doing this, but I really do not feel like making a mob farm, and also, this method is just kind of a waste of time and resources, and I feel a little bad doing it. I also tried enchanting books to potentially get Fortune books, but that didn't work as well. My leather supply is kind of lacking, and my cow farm is a little slow; leather is honestly kind of valuable to me, since it takes a lot of time to get.
I want to start mining at my second base again. There's this massive cave system at my second base that I want to exploit as much as possible (and already have mined a lot at). I got so many resources from there, especially iron. And with my boat with a chest, I can spend a lot of time there and get a ridiculous amount of minerals and haul them back to my main base. But I refuse to start mining again until I have Fortune III (Fortune II MINIMUM). I also want it so I can go mine diamonds in my diamond strip mine again. My Fortune III pickaxe, my beloved pickaxe, gave me so many diamonds, I may be the richest person in the world. And I want to mine diamonds with Fortune. You can call me a greedy pig as much as you want, but I need my Fortune III.
By the way, I used to have the same style as you, but 1.17 made it so I couldn't even use iron without fortune and I couldn't have every game begin with me finding a village.

Any tips?
A) go fishing
go to another village and do the shtick there, then set a railway or portal to get to them fast
C) zombify and cure your villager, then do the lectern shuffling thing
D) go caving without mining ores and search for dungeons, mineshafts, and ancient cities
