I now have enough netherite to upgrade four things, but apart from a sword, I don't even know if anything is worth upgrading.
Everything I have is diamond, except one piece of gold armour I put on when I go to the nether.
I have mending on everything, so the durability boost isn't really any use.
Netherite doesn't increase armour defence, so it's no use for armour.
My diamond pickaxes with Efficiency IV (not even V) are fast enough that it's so easy to break weaker blocks by accident (e.g netherrack, quartz). It could be a bit faster when mining stone, but I doubt I'll need to mine much again - like I said, I have diamond everything, I don't need much gold (and I can get it in the nether if I do) redstone and lapis are always plentiful. I have villagers for emeralds. Maybe if I ever need to dig out a huge area it might be nice to have a faster pickaxe, but I have no plans to do that. If I do I'll probably make a new pickaxe rather than upgrade an existing one so I can keep using diamond pickaxes for more delicate work.
Diamond shovels and hoes already break blocks pretty much instantly.
So I could get a netherite sword for a small damage boost, and maybe a netherite pickaxe just in case I want to dig out a big area for a slime farm or something, or maybe if I want to mine a lot of obsidian. Apart from that I don't know why I'd even want it.

You're technically correct but not entirely. Java 1.9 made it so armor ratings are reduced by higher-power attacks. It also added the special armor value Armor Toughness that resists this reduction in damage (from what I understand). Only Diamond and Netherite have Armor Toughness, but Netherite's is stronger.

Swords probably benefit the most - even though a netherite sword with Sharpness V only does 10% more damage than a diamond sword (11 vs 10) the impact is quite significant; zombies have 2 innate armor points and even at maximum armor penetration (yes, it even affects this type of armor) you still need to deal at least 10.163 damage per attack to kill them in two non-critical hits (IMO, the nerf to Sharpness is second to general armor penetration as the most annoying "feature" of 1.9 combat; if they wanted creepers to one-shot you in even max armor (sans Blast Protection) they could have just increased the damage they do, and nerfing armor and weapons at the same time (affecting both players and mobs) doesn't make much sense); likewise, they could have reserved armor penetration for special attacks or weapons).
